Shop225 is a family run pizzeria in Pascoe Vale, founded by two Italians who believe great food should bring everyone together. No exceptions. No compromises. This is the team that sets the table.

Our Story

Two mates, one table for everyone

In late 2016, Lorenzo Tron of Trieste and Roberto Davoli of Reggio Emilia took over a modest shop on Melville Road with one rule between them that nobody gets a lesser meal because of what they can or can't eat.


Later on, that shop feeds vegans, coeliacs and people who simply love traditional pizza side by side, and the two of them still run it the same way they did on night one.

Lorenzo Tron

Lorenzo grew up in Trieste, in Italy's north east, and carried that food culture to Melbourne dough first. From the very beginning his kitchen was built on a big idea: authentic Italian food should be within reach of everyone, whatever their dietary needs, and it should never taste like a compromise.


That standard has taken him a long way from a shop. In 2026 he was handpicked as an official judge at the Australian Pizza Championships at ICC Sydney, scoring the country's best across classic, creative and Neapolitan categories. Between services, he teaches Shop225's hands-on cooking classes, passing on the same techniques he judges at national level.

Roberto Davoli

Roberto comes from Reggio Emilia, in the heartland of Italian food. Together with Lorenzo, he took a shop on Melville Road and helped build it into a pizzeria that now carries national and world rankings.


For Roberto, a good night is simple. You walk in, you're family, and you leave planning your next visit. His measure of a good service has nothing to do with awards; it's a full table where nobody had to ask for a separate menu, and everybody stayed for one more course than they planned.

Our Team

The crew behind every service

Two founders can't feed a suburb on their own. Long before the doors open, someone on this crew is stacking wood for the oven, someone is giving the dough its final stretch, and someone is running the checks that keep every gluten-free, vegan and halal-friendly order safe. Pizzaioli, pasta makers, kitchen hands and front of house, every one of them owns a piece of the service.

Our Belief

A place at the table for everyone

At Shop225, dietary requirements have never been an afterthought. They are the reason we cook the way we do. Whether you're vegan, coeliac, gluten-free, halal conscious, or simply someone who loves exceptional pizza, you will find a seat at our table.


The craft is traditional. Wood fired oven lit from scratch every service. Dough proofed for 72 hours. Home made pasta and gnocchi. House made vegan cheese. Ingredients chosen with obsessive attention to quality.


When you respect the ingredients, the people you're cooking for, and the traditions behind the food, the result takes care of itself.
