Pronto 478 is the newest venue in the family, bringing the same founders and the same respect for real Italian cooking to 478 Centre Road, Bentleigh. Where Shop225 is built around the wood-fired oven and a long table, Pronto 478 is built around the Italian street food tradition: stone-baked Roman-style pizza with a light, blistered crust, pasta tossed to order, generously filled panini, and golden arancini and fried snacks made fresh through the day rather than left sitting under a warmer.
It is faster and more casual than its sisters, but nothing is rushed where it counts. The dough is rested for flavour, the pasta is shaped by hand, and gluten-free, vegan, vegetarian and halal-conscious options are part of how the kitchen cooks, not an afterthought.
