Being reviewed by The Age, one of Australia’s most respected publications, is a milestone we are truly honoured by. Food writer Dani Valent visited Shop225 and captured everything we believe in, summing us up in two words: warm and creative.

Slice of the Action for All
The Age's Sunday Best section featured Shop225 under the headline "Slice of the Action for All", and that title says it all. Owners Lorenzo Tron and Roberto Davoli have poured years of research and genuine care into building a menu that works for everyone, whether you are gluten-free, vegan, vegetarian, halal, or a committed carnivore. As Dani Valent put it, pizza is about bringing everyone together around the same table, and there is no other way.
Shop225 opened in 2018 and quickly became the
first pizza shop in Australia accredited by Coeliac Australia, earning a reputation for its respectful and safe approach to diners with gluten sensitivities. The gluten-free base is made from a special blend of rice, corn, potato and chickpea flour, and comes out just as crisp and satisfying as the wheat version. Dairy-free diners can enjoy vegan mozzarella, and halal meat options are available across the menu.
The Dough, The Dishes, The Details
The regular pizza dough is made using flour sourced from the Veneto region of Italy and rested for 72 hours, resulting in a base that is light, digestible, and full of flavour. The 2807 pizza, with fior di latte, porcini, mushroom cream and sausage, was singled out as a standout. The gnocchi bites, inspired by Tron's hometown near Trieste in Austria, are fluffy, crisp and moreish, tossed with salt and a lovely seafood fritto misto.
For dessert, the tiramisu is completely alcohol-free and the chocolate salami is made from Tron's nonna's own recipe, a detail that speaks to the heart and soul behind everything on the menu.
