Meet Papa Umberto
Umberto Papa, born in 1995 in Abruzzo, Italy, has been passionate about pizza-making since childhood. Starting his training at just 16, he brought his craft from Italy to Australia and is now the head pizzaiolo at Shop225, mentored by founders Lorenzo Tron and Roberto Davoli.


What Makes Shop225 Special
Shop225 was the first Australian pizzeria certified to prepare pizzas for people with coeliac disease. They also offer a wide selection of vegan, vegetarian, meat, and halal options, welcoming every guest at the table.
Every pizza is made with doppio zero flour, dough matured for 72 hours, hydrated at ~70%, and baked in a wood-fired oven at 380 to 420°C, resulting in a light, digestible, and authentically flavoured pizza.
